Wonderful Pistachios
Dubbed the “skinny nut,” pistachios yield the most nuts per serving: 49 pistachios in a 1-oz serving compared to 23 almonds. Because they have protein and fiber, pistachios help promote satiety—so you are likely to eat less, but feel fuller longer. Additionally, it is one of the only in-shell snack nuts that take longer to eat.
Most of the fat in pistachios is “good” unsaturated fat that can help lower the risk of heart disease. In a new study published in the September 2008 issue of the American Journal of Clinical Nutrition, researchers found that eating one to two handfuls of pistachios a day resulted in a 9 to 12% reduction in LDL “bad” cholesterol levels.
In addition, pistachios have a greater antioxidant capacity than green tea and are the only nut to contain significant amounts of lutein and zeaxanthin, two antioxidants that have been associated with a reduced risk of age-related macular degeneration, the leading cause of blindness in Americans over 65.
